The mechanism is simple enough to describe in a paragraph, which is unusual for anything cryptographic, and being able to describe it is the difference between using it and trusting a badge that says it.
How the mechanism works
Before a round, the operator commits to a server seed by publishing its hash. You supply or are assigned a client seed. The result is computed from both, so neither party alone determines it, and afterwards the server seed is revealed so you can recompute the hash and confirm nothing changed between the commitment and the play.
That is the whole of it. It is a commitment scheme, it works, and it is a real improvement on a black box. Every operator running its own originals can do this; almost none of them can do it for a third-party slot, because the mechanism belongs to the studio rather than the casino.

The three things it does not prove
It does not prove the house edge is small. A verifiable game can take any margin the operator chooses and the verification will happily confirm each round of it. The edge is in the payout table, not in the seeds.
It does not prove the operator will pay you, which is a solvency and contract question. And it does not prove the client seed was not chosen for you in a way you never inspected — which is why the operators worth using let you set your own and rotate it. The longer version goes through each.
What to check if you actually want to use it
That you can see the hashed server seed before playing rather than only afterwards. That you can set and change the client seed yourself. That a verification tool exists, and ideally that the algorithm is documented well enough to recompute the result outside the operator's own page.
If all four are present the mechanism is real and usable. If the only evidence is the phrase printed in a footer, it is a marketing claim about a cryptographic scheme, which is not the same thing as the scheme.
What separates one provably fair casino from another
Not the lobby, which is bought from the same studios everywhere, and not the marketing. What differs is written down: which USDT networks the cashier credits, what the wagering base is, what the withdrawal limits say per period, and whether the verification clause names a threshold. Four documents, a few minutes each. How to read them quickly.
